Country Apple Fritter Bread (Print Version)

# Ingredients:

→ For the apple bread

01 - Nonstick cooking spray, for greasing the loaf pan
02 - 2 apples, peeled and chopped
03 - 2/3 cup (134 g) granulated sugar, plus 2 tablespoons for tossing apples
04 - 1/2 cup (113 g) unsalted butter, softened
05 - 2 large eggs
06 - 1 1/2 teaspoons vanilla extract
07 - 1 1/2 cups (190 g) all-purpose flour
08 - 1 3/4 teaspoons baking powder
09 - 1/2 cup (120 ml) milk or almond milk, plus 1 to 3 tablespoons for glaze
10 - Salt, to taste

→ For the cinnamon sugar filling

11 - 1/3 cup (67 g) light brown sugar
12 - 2 teaspoons ground cinnamon

→ For the glaze

13 - 1/2 cup (60 g) powdered sugar

# Instructions:

01 - Preheat oven to 175°C. Grease a 23 x 13 cm loaf pan with nonstick cooking spray.
02 - Combine light brown sugar and ground cinnamon in a small bowl; set aside. Toss chopped apples with 2 tablespoons of granulated sugar; set aside.
03 - In a large mixing bowl, beat softened butter with remaining granulated sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
04 - In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
05 - Gradually incorporate the dry ingredients into the butter mixture, alternating with the milk. Begin and end with dry ingredients, mixing until just combined.
06 - Spread half of the batter evenly into the prepared loaf pan. Scatter half of the cinnamon sugar over the batter, then layer half the apples on top. Repeat with remaining batter, cinnamon sugar, and apples.
07 - Place in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted in the centre comes out clean.
08 - Let bread cool in pan for 10 minutes, then transfer to a wire rack. In a bowl, mix powdered sugar with 1 to 3 tablespoons of milk to form a drizzle. Once bread is completely cool, drizzle glaze over the top.
09 - Slice and serve as a sweet snack or dessert.
