Chocolate Cornflake Bites (Print Version)

# Ingredients:

→ Main Layer

01 - 170g smooth peanut butter
02 - 60ml of your favorite liquid sweetener, like maple syrup
03 - 80g crispy cereal (cornflakes are good too)
04 - 2 tablespoons melted coconut oil (skip if your peanut butter is runny)
05 - A tiny dash of salt

→ Chocolate Topping

06 - 1 teaspoon coconut oil, melted
07 - 150g pieces of dark chocolate

# Instructions:

01 - Heat the peanut butter, sweetener, coconut oil (if using), and a bit of salt in a pot over low. Stir until it turns velvety smooth.
02 - Once off the stove, gently stir in the cereal. Coat everything evenly but try not to crush the flakes too much.
03 - Transfer the blend to lined molds or a parchment-lined loaf pan. Press it down firmly so it stays together.
04 - Place the molds or tin into the freezer. Let the mixture harden for around 2 hours. If you used a pan, lift out the block with the parchment and slice it into pieces.
05 - Melt the dark chocolate along with the coconut oil. Use a microwave with pauses to stir frequently or a bowl sitting over simmering water to melt gradually.
06 - Dip each piece into the melted chocolate. Shake off the extra coating and lay them on parchment over a baking sheet.
07 - Refrigerate the tray for 30 minutes to an hour, so the chocolate layer sets up hard.
08 - Keep these bites in a freezer-safe container. Let them sit out for a bit (about 20 minutes) before enjoying a softer texture.

# Notes:

01 - You can store these in the freezer for as long as three months.
02 - Swap maple syrup with honey, agave, or other sweeteners you like.
03 - Make it fun by adding vanilla or sprinkle sea salt on the chocolate topping.
