Lay tortillas on a flat surface. Place 2 slices of cheese on one side of each tortilla. Divide seasoned beef evenly among tortillas and layer with onions, pickles, and 2 additional slices of cheese. Fold tortillas in half to form a half-circle.

Heat a skillet over medium-high heat and add olive oil. Cook each quesadilla until golden and crispy on one side, about 2-3 minutes. Flip and cook the other side until golden. Repeat in batches if necessary.

Let cooked quesadillas rest for 1 minute. Slice into 2-3 triangles each and serve immediately with dipping sauce.
