Cheesy Chicken Alfredo Lasagna (Print Version)

# Ingredients:

→ Chicken

01 - 2 lbs boneless, skinless chicken breasts
02 - 2 tbsp olive oil
03 - 1 tsp Italian seasoning
04 - 1/2 tsp garlic powder
05 - Salt and pepper to taste

→ Alfredo Sauce

06 - 1/2 cup butter (1 stick)
07 - 4 cloves garlic, minced
08 - 2 cups heavy cream
09 - 8 oz cream cheese, softened and cubed
10 - 2 cups freshly grated Parmesan cheese
11 - 1/2 tsp black pepper
12 - 1/4 tsp nutmeg

→ Assembly

13 - 12 lasagna noodles (no-boil or cooked)
14 - 4 cups shredded mozzarella cheese
15 - 2 cups ricotta cheese
16 - 1/2 cup grated Parmesan cheese
17 - 2 tbsp fresh parsley, chopped (plus more for garnish)
18 - 1 large egg

# Instructions:

01 - Preheat oven to 375°F (190°C). Season chicken breasts with olive oil, Italian seasoning, garlic powder, salt, and pepper. Bake for 25-30 minutes until cooked through (internal temperature 165°F). Let cool slightly, then shred or dice the chicken.
02 - In a large saucepan, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant. Add heavy cream and bring to a simmer. Add cream cheese and whisk until melted and smooth. Gradually stir in Parmesan cheese until melted. Season with black pepper and nutmeg. Simmer for 5-10 minutes until slightly thickened.
03 - In a bowl, combine ricotta cheese, 1 cup of mozzarella, 1/2 cup Parmesan, parsley, and egg. Mix well until combined.
04 - Preheat oven to 375°F (190°C). Spread 1/2 cup of Alfredo sauce on the bottom of a 9x13 inch baking dish. Arrange 4 lasagna noodles over the sauce. Spread 1/3 of the ricotta cheese mixture over the noodles. Add 1/3 of the shredded chicken. Pour 1/3 of the remaining Alfredo sauce. Sprinkle with 1 cup of mozzarella cheese. Repeat layers twice more, ending with noodles, sauce, and remaining mozzarella on top.
05 - Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden. Let stand for 15 minutes before serving. Garnish with additional fresh parsley if desired.
