01 -
In a large bowl, whisk together ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice if using until the mixture is thoroughly combined.
02 -
Place the chicken cubes in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes, or up to 2 hours for enhanced flavor.
03 -
If using wooden skewers, soak them in water for 15 minutes to prevent burning. Thread marinated chicken pieces onto the skewers, leaving slight gaps for even cooking.
04 -
Preheat your grill to medium-high heat.
05 -
Place skewers on the grill and cook for 10–15 minutes, turning occasionally, until chicken is cooked through and reaches an internal temperature of 75°C. Achieve a light char on the exterior.
06 -
Remove the skewers from the grill and rest for several minutes. Garnish with extra chopped parsley or grated parmesan as desired and serve with preferred accompaniments.
