Strawberry Mango Margarita Cupcakes (Print Version)

# Ingredients:

→ Cupcakes

01 - 3 1/2 cups (430 g) plain all-purpose flour
02 - 1 1/4 cups (265 g) caster superfine sugar
03 - 3 tsp baking powder
04 - 1/2 tsp fine salt
05 - 1/2 cup (125 g) unsalted butter, softened
06 - 2 large eggs
07 - 1 1/2 cups (375 ml) full-cream whole milk
08 - 1/2 cup (125 ml) vegetable oil
09 - 2 tbsp Greek yoghurt or sour cream
10 - 1 tsp vanilla extract or vanilla bean paste
11 - 4 drops pink food gel + 3 drops red food gel
12 - 1 tsp strawberry flavouring
13 - 4 drops yellow food gel
14 - 1 tsp mango flavouring
15 - 2 tsp tequila (optional)

→ Frosting

16 - 1 batch American buttercream frosting or Swiss meringue buttercream frosting
17 - 5 drops pink food gel + 3 drops red food gel
18 - 1 tsp strawberry flavouring
19 - 5 drops yellow food gel
20 - 1 tsp mango flavouring

→ Decorations

21 - 1 cup granulated sugar
22 - 10 limes - cut into 40 wedges
23 - 10 strawberries, washed and halved

# Instructions:

01 - Preheat a fan-forced oven to 140°C (275°F) or a conventional oven to 160°C (320°F). Line two cupcake tins with liners. Add flour, sugar, baking powder, and salt to a large mixing bowl and blend. Add softened butter and mix until crumbly.
02 - Add eggs, milk, oil, yoghurt, tequila, and vanilla. Mix on low speed until fully incorporated. Scrape down the bowl and mix for 20 seconds more.
03 - Divide the batter into two bowls. Mix pink and red food gel with strawberry flavouring into one bowl. Mix yellow food gel and mango flavouring into the other.
04 - Transfer each batter to separate piping bags. Pipe yellow batter into lined tins, followed by red batter swirls on top. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a rack.
05 - Divide prepared frosting into two bowls. Add pink and red food gel with strawberry flavouring to one, and yellow food gel with mango flavouring to the other. Mix thoroughly.
06 - Brush the rim of each cooled cupcake with a little water and roll in sugar. Use a star tip to pipe dual-colored frosting swirls. Garnish with lime wedges, halved strawberries, and a paper straw for a cocktail-inspired look.
