5 Ingredient Beef Enchiladas (Print Version)

01 - 1 pound lean ground beef
02 - 1 cup chunky salsa
03 - 1 (10-ounce) can red enchilada sauce
04 - 8 (8-inch) tortillas (flour or corn)
05 - 1 (8-ounce) package shredded Mexican four-cheese blend (about 2 cups)

# Instructions:

01 - Preheat oven to 350°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
02 - Brown ground beef in a large skillet over medium-high heat. Drain excess fat. Return to skillet over medium-low heat. Stir in salsa and cook until heated through. Remove from heat.
03 - Pour half of the enchilada sauce into the baking dish.
04 - Warm tortillas. Add ¼ cup meat mixture to the center of each tortilla, top with 1 tablespoon of cheese. Roll tightly and place seam-down in the dish.
05 - Pour remaining enchilada sauce over tortillas. Sprinkle with remaining cheese. Cover tightly with foil and bake for 30-35 minutes.
