Creamy comfort food classic (Print Version)

# Ingredients:

01 - 3 cups chicken, cooked and diced or shredded
02 - 3 cups cooked rice
03 - 1/2 cup butter, cubed and at room temperature
04 - 8 ounces cream cheese, cubed and at room temperature
05 - 10.5 ounces cream of chicken soup
06 - 3 cloves garlic, minced
07 - 0.7 ounce packet Italian dressing mix (such as Good Seasons)
08 - 1 cup chicken stock
09 - 2 cups shredded Colby Jack cheese, divided
10 - Salt and pepper to taste
11 - Fresh parsley for garnish

# Instructions:

01 - Begin by preheating the oven to 350 degrees Fahrenheit (175 degrees Celsius). Prepare a 9x13 inch casserole dish by coating it with non-stick cooking spray.
02 - Place the butter and cream cheese in a microwave-safe bowl. Heat in the microwave for approximately 20-30 seconds or until soft. Remove and whisk the mixture until smooth.
03 - In a large mixing bowl, combine the cooked chicken, cooked rice, the smoothed butter and cream cheese mixture, cream of chicken soup, minced garlic, Italian dressing mix, chicken stock, and half of the shredded Colby Jack cheese. Season with salt and pepper to taste. Stir until fully integrated.
04 - Carefully transfer the chicken and rice mixture into the prepared casserole dish, spreading it evenly.
05 - Sprinkle the remaining shredded Colby Jack cheese over the top of the casserole.
06 - Cover the casserole dish with aluminum foil. Place it in the preheated oven and bake for 20-25 minutes, or until the cheese has melted thoroughly and the casserole is bubbling around the edges.
07 - Once baking is complete, remove the casserole from the oven and let it rest for approximately 5 minutes. Remove the foil, garnish with fresh parsley, and serve while warm.
