Preheat oven to 400°F. Grease a baking sheet thoroughly with nonstick cooking spray.

In a medium bowl, whisk together all-purpose flour, baking powder, kosher salt, and ground cinnamon until well combined.

In a large bowl, whisk together melted unsalted butter and granulated sugar until fully incorporated. Then add the egg, vanilla extract, and unsweetened applesauce, whisking until the mixture is smooth.

Add the dry mixture into the wet ingredients. Stir gently just until no streaks of flour remain. Avoid overmixing.

Gently fold in the finely diced apples, distributing them evenly throughout the batter.

Using a tablespoon, scoop out 1-tablespoon portions of batter and drop them onto the prepared baking sheet, spacing a few inches apart.

Bake in the preheated oven for 10 minutes, until the bites are puffed and set.

While the fritter bites bake, whisk together powdered sugar and apple cider (or apple juice) in a bowl until the glaze becomes thin and pourable.

Remove the baked fritter bites from the oven. Immediately brush a portion of the glaze over the warm fritters, allowing excess to drip down the sides.

Set oven broiler to high. Return the glazed fritter bites to the oven and broil for 2–4 minutes, rotating the pan frequently, until the glaze bubbles and begins to caramelize. Monitor closely to avoid burning.

Remove from oven and carefully brush the remaining glaze over the tops of the fritter bites. Allow to sit for 15 minutes to let the glaze set before serving.
