Chicken Burgers Avocado Corn Salsa (Print Version)

# Ingredients:

→ Chicken Patties

01 - 1/2 teaspoon ground black pepper
02 - 1/2 teaspoon salt
03 - 1/4 cup mayonnaise
04 - 1 cup shredded cheese (Gouda, Cheddar, or Provolone)
05 - 2 scallions, chopped up small
06 - 1 1/2 pounds ground chicken thighs

→ Avocado Corn Salsa

07 - 1/2 lime, squeezed for juice
08 - Salt and pepper, for your taste
09 - 1/2 tablespoon olive oil
10 - 1/8 cup fresh cilantro, chopped
11 - 1 ear fresh corn, cut from the cob
12 - 1 big avocado, sliced

# Instructions:

01 - Spoon the avocado corn salsa onto your finished chicken patties and dig in right away.
02 - Chop corn off the cob with a sharp knife as the patties cook. Toss corn, sliced avocado, and cilantro into a bowl. Pour over the olive oil, add lime juice, sprinkle with salt and pepper, and mix just enough to come together.
03 - Drop your patties onto a grill pan or outdoor grill. Cook about 5 minutes per side. They're ready when cooked through and not pink anywhere.
04 - Scoop out a heaping 1/2 cup of the chicken mix and roll into a round patty. Make each one the same size.
05 - Toss ground chicken, cheese, scallions, mayo, salt, and pepper in a bowl and mix well so everything's all throughout.

# Notes:

01 - Don’t stir your chicken mixture too much or the patties will end up less juicy.
