Combine flour, sugar, baking powder, baking soda, and salt in a large bowl.

Make a well in the center of the dry ingredients and add milk, melted butter, vanilla, and egg. Whisk the wet ingredients together first, then gradually incorporate the dry ingredients until smooth. The batter should be thick; if it's too thick, add small amounts of milk until desired consistency is achieved.

Set the batter aside to rest while preheating your pan or griddle.

Heat a nonstick pan or griddle over low-medium heat and lightly grease with butter. Pour 1/4 cup of batter onto the pan and spread into a round shape. Cook until the underside is golden and bubbles appear on the surface, then flip and cook until golden on the other side. Repeat with the remaining batter.

Serve the pancakes with honey, maple syrup, fruit, ice cream, frozen yogurt, or enjoy plain.
