Preheat the oven to 400°F. Line a large baking sheet with parchment paper and set a baking rack on top.

In medium bowl mix together chicken breast pieces and all purpose flour until well coated.

In a separate medium bowl whisk together eggs. In another separate large bowl, mix together panko bread crumbs, garlic powder, kosher salt, a few turns of fresh cracked black pepper, cayenne pepper, and paprika.

Coat each piece of chicken into the egg mixture and then dip into the panko bread mixture, pressing the coating onto the chicken piece. Transfer the chicken bites onto the baking rack. Drizzle chicken pieces with olive oil.

Bake for 12 minutes. Turn each chicken piece after 12 minutes of cooking, so they brown evenly. Bake for an additional 12-15 minutes, or until the chicken reaches an internal temp of 165°F and are golden brown on the outside.

Let chicken pieces cool slightly and then toss in buffalo sauce, until well coated. Serve with a bowl of blue cheese dressing topped with blue cheese crumbles. Serve celery sticks and carrot sticks on the side.
