Preheat your oven to 375°F (190°C).

Using a serrated knife, gently slice each croissant in half horizontally. Be careful not to cut all the way through.

In a small bowl, combine the softened butter, Dijon mustard, honey, and thyme (if using) until well blended.

Spread a tablespoon of the butter mixture on the inside of each croissant. Layer two slices of ham and two slices of Swiss cheese in each croissant. Add a dash of freshly cracked black pepper to each sandwich.

Close the croissant halves and spread any remaining butter mixture on the outside of each croissant.

Arrange the croissants on a baking sheet lined with parchment paper. Bake in the preheated oven for about 12-15 minutes, or until the croissants are golden brown and the cheese is melted.

Remove from the oven, let cool for a couple of minutes, and garnish with fresh parsley before serving. Enjoy warm!
