Cheesy Corn Fritters (Print Version)

# Ingredients:

01 - 2 tablespoons butter, melted.
02 - 2 eggs.
03 - ¼ cup milk (2% or whole).
04 - ½ cup flour.
05 - ¾ teaspoon baking powder.
06 - ¼ teaspoon salt.
07 - ⅔ cup cheddar cheese, grated.
08 - ¼ cup Parmesan cheese, grated.
09 - 1 corn cob, kernels removed.
10 - 1 tablespoon chives.
11 - Olive oil or butter for cooking.

# Instructions:

01 - Whisk butter, milk and eggs. Stir in flour, baking powder and salt until just combined.
02 - Fold in cheddar, Parmesan, corn kernels and chives until evenly distributed.
03 - Heat skillet over medium-high heat. Add oil or butter until hot.
04 - Drop ½ cup batter per fritter. Cook 2-3 minutes until golden and bubbling, then flip.
05 - Cook additional 2-3 minutes until second side is golden. Serve hot.

# Notes:

01 - Can add cooked bacon, sausage or ham.
02 - Can use frozen or canned corn instead of fresh.
