Cheesy Muffin Sausage Brunch (Print Version)

# Ingredients:

→ Base and Toppings

01 - Dash of milk to mix with eggs
02 - 60 grams mild cheddar, shredded up
03 - 50 grams breakfast sausage, cooked and crumbled up
04 - 4 large eggs
05 - 4 English muffins, halved

→ Sausage Gravy

06 - 1.25 millilitres black pepper
07 - 1.25 millilitres salt
08 - 16 grams regular flour
09 - 60 millilitres sausage fat
10 - 240 millilitres milk

# Instructions:

01 - Let them cool off for a bit after pulling out of the oven, then dig in.
02 - Stick the tray in your hot oven and bake everything for about 10 minutes, just until the cheese melts and starts bubbling.
03 - Put all your English muffin halves on a sheet pan. Slather on the sausage gravy first. Pile on scrambled eggs, sprinkle the sausage crumbles, and toss the shredded cheddar on top.
04 - Crank your oven up to 180°C so it's hot before you start baking.
05 - Beat the eggs together with a little milk in a bowl. Dump them into a skillet over medium heat and cook, stirring gently, till they're just barely set. Take 'em off the heat quick.
06 - Slowly pour in the milk while whisking. Keep going so there aren't any lumps. Sprinkle in the salt and black pepper. Let it cook until it gets nice and thick, then set aside.
07 - Get a saucepan on medium. Pour in sausage fat with flour and stir it all the time till it thickens up into a smooth paste.

01 - Try to spread the cheese out evenly on each muffin half so every bite is super melty.
