Wash baby potatoes thoroughly and cut into halves or quarters for even roasting.

Slice smoked sausage into 1/4-inch thick rounds to ensure even cooking.

In a small bowl, combine ranch seasoning, garlic powder, onion powder, and black pepper.

Place potatoes in a large bowl. Drizzle with olive oil and add half of the seasoning mixture. Toss to coat completely.

Line a large baking sheet with parchment paper or lightly grease to prevent sticking.

Distribute seasoned potatoes in a single layer on the baking sheet. Scatter sliced sausage evenly over the potatoes.

Place baking sheet in oven and roast for 35–40 minutes, stirring once halfway through, until potatoes are golden brown and tender.

Remove baking sheet from oven. Sprinkle shredded cheddar cheese evenly over potatoes and sausage. Return to oven and bake for 5 more minutes until cheese is fully melted and bubbling.

Transfer to a serving platter. Garnish with chopped parsley and serve hot with sour cream if desired.
