Heat a non-stick skillet over medium heat. Add sausage links and cook, turning occasionally, until browned and fully cooked, about 8–10 minutes. If using ground sausage, cook and crumble until no longer pink and well-browned. Transfer sausage to a plate and set aside.

In a medium bowl, whisk eggs, milk, salt, and black pepper until smooth and well combined.

Melt butter in the same skillet over medium heat. Pour in egg mixture and cook gently, stirring with a spatula, until eggs are just set but still creamy. Remove skillet from heat.

Heat tortillas individually in the microwave for 10–15 seconds or in a dry skillet set over medium heat for a few seconds per side, until pliable.

Divide scrambled eggs evenly among the center of each tortilla. Top with cooked sausage and sprinkle over the shredded cheese.

Fold in the sides of the tortilla, then roll tightly from the bottom up to enclose the filling.

Optional: Place assembled wraps seam-side down in a preheated skillet or grill pan. Cook over medium heat for 1–2 minutes per side, pressing gently, until the tortillas are golden and the cheese is melted. Serve immediately with salsa, hot sauce, or green onions on the side.
