Cheesy Tortellini Cajun Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
02 - 2 tbsp unsalted butter
03 - 2 tbsp Cajun seasoning
04 - 1 tsp garlic powder
05 - 1/2 tsp smoked paprika
06 - Salt and black pepper to taste

→ Tortellini

07 - 20 oz package of cheese tortellini (fresh or frozen)
08 - 4 tbsp unsalted butter
09 - 3 cloves garlic, minced
10 - 1/2 cup heavy cream
11 - 1/2 cup chicken broth
12 - 1 cup shredded mozzarella cheese
13 - 1/2 cup grated Parmesan cheese
14 - 1/4 cup chopped green onions, for garnish

# Instructions:

01 - In a medium bowl, toss the chicken cubes with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper until evenly coated.
02 - In a large skillet, melt the butter over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
03 - While the chicken is cooking, cook the tortellini according to package directions. Drain well and set aside.
04 - In the same skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
05 - Pour in the heavy cream and chicken broth. Bring to a simmer, then reduce heat to low.
06 - Stir in the mozzarella and Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
07 - Add the cooked tortellini to the cheese sauce and toss to coat. Gently fold in the cooked Cajun chicken bites.
08 - Serve immediately, garnished with chopped green onions.
