Chicken Gyro Bowls (Print Version)

# Ingredients:

01 - 1 1/4 pounds chicken breasts, cubed.
02 - 1/4 cup Greek yogurt for marinade.
03 - 2 tablespoons lemon juice.
04 - 2 cloves garlic, grated.
05 - 2 tablespoons parsley.
06 - 1 tablespoon olive oil.
07 - 1 1/2 teaspoons dried oregano.
08 - 1/2 teaspoon each: paprika, cumin, coriander.
09 - 1 1/2 cups Greek yogurt for tzatziki.
10 - 1 cup shredded cucumber.
11 - 1 tablespoon fresh dill.
12 - 2 cups cooked brown rice.
13 - 1 cup each: tomatoes, cucumber.
14 - 1/4 cup red onion.
15 - 1/2 cup feta cheese.
16 - 1/3 cup kalamata olives.

# Instructions:

01 - Combine yogurt, lemon, garlic, herbs and spices for marinade.
02 - Add cubed chicken to marinade, let sit 30 minutes.
03 - Mix yogurt, cucumber, dill, garlic, lemon juice and seasonings.
04 - Brown marinated chicken in oiled skillet 3-4 minutes per side.
05 - Layer rice, chicken, vegetables, feta, olives, and tzatziki sauce.
