Healthy Chocolate Chickpea Truffles (Print Version)

# Ingredients:

→ Truffle Base

01 - 1 can (13.5 oz) chickpeas, drained and rinsed
02 - ½ cup nut or seed butter (almond or cashew recommended)
03 - 1 cup vegan dark chocolate chips, melted

→ Coating

04 - 1 cup vegan dark chocolate chips, melted
05 - 1 tablespoon coconut oil

→ Optional Toppings

06 - Cacao nibs
07 - Goji berries
08 - Sprinkles
09 - Shredded coconut
10 - Nuts or seeds
11 - Freeze-dried fruits

# Instructions:

01 - Drain and rinse chickpeas thoroughly. Melt 1 cup chocolate chips in microwave or double boiler.
02 - Combine chickpeas, nut butter, and melted chocolate in food processor. Blend 45-60 seconds until smooth.
03 - Use cookie scoop to portion mixture onto parchment-lined baking sheet. Freeze 15-20 minutes, then roll into smooth balls. Freeze another 10 minutes.
04 - Melt remaining chocolate chips with coconut oil for dipping.
05 - Dip frozen truffle balls in melted chocolate. Add optional toppings if desired. Freeze until hardened.

02 - Can be frozen for 30-60 days
03 - Food processor works better than blender
