                Drain and rinse chickpeas thoroughly. Melt 1 cup chocolate chips in microwave or double boiler.

                Combine chickpeas, nut butter, and melted chocolate in food processor. Blend 45-60 seconds until smooth.

                Use cookie scoop to portion mixture onto parchment-lined baking sheet. Freeze 15-20 minutes, then roll into smooth balls. Freeze another 10 minutes.

                Melt remaining chocolate chips with coconut oil for dipping.

                Dip frozen truffle balls in melted chocolate. Add optional toppings if desired. Freeze until hardened.
