Chocolate Strawberry Cheesecake (Print Version)

# Ingredients:

01 - 1¾ cups graham cracker crumbs.
02 - 6 tablespoons unsalted butter, melted.
03 - 16 ounces cream cheese, softened.
04 - ¾ cup granulated sugar.
05 - 2 large eggs.
06 - 1 large egg yolk.
07 - 2 teaspoons vanilla extract.
08 - ½ teaspoon sea salt.
09 - 18 fresh strawberries.
10 - 8 ounces 56% dark chocolate, melted.

# Instructions:

01 - Mix graham crumbs with melted butter. Press 1½ tablespoons into each mini cheesecake mold.
02 - Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in vanilla and salt.
03 - Fill molds with cheesecake mixture. Bake at 325°F for 20-25 minutes until set.
04 - Cool to room temperature then refrigerate at least 1 hour.
05 - Remove from molds. Top with melted chocolate and chocolate-dipped strawberries.

# Notes:

01 - Best served immediately.
02 - Chocolate will harden over time.
