Cilantro Lime Grilled Chicken Tacos (Print Version)

# Ingredients:

→ Cilantro Lime Marinade

01 - 4 boneless skinless chicken thighs (approx. 1 lb)
02 - 2 tablespoons chopped cilantro
03 - Juice and zest of 2 limes
04 - 1 teaspoon salt
05 - 1 teaspoon chili powder
06 - 1 teaspoon cumin
07 - ½ teaspoon garlic powder
08 - ½ teaspoon ground coriander
09 - 1 tablespoon oil

→ Taco Assembly

10 - Tortillas
11 - Pico de gallo
12 - Cheese
13 - Fresh cilantro

# Instructions:

01 - Mix oil, lime juice, lime zest, cilantro, and spices in a small bowl. Place chicken in an airtight container or sealable bag, pour the marinade over, and shake to coat evenly. Marinate for at least 30 minutes, ideally up to two hours.
02 - Set up a grill or campfire for cooking.
03 - Remove chicken from the marinade and place on the grill. Cook until the internal temperature reaches 165°F, turning as needed for even cooking (approx. 5-8 minutes per side). Remove and chop into bite-sized pieces.
04 - Layer grilled chicken, pico de gallo, cheese, and fresh cilantro into tortillas. Warm tortillas on the grill if desired, and serve immediately.
