Homemade Lobster Bisque (Print Version)

# Ingredients:

01 - 4 medium lobster tails.
02 - 2 tablespoons olive oil.
03 - 1 onion, chopped.
04 - 2 carrots, chopped.
05 - 2 celery stalks, chopped.
06 - 2 garlic cloves, minced.
07 - 2 tablespoons tomato paste.
08 - 1 cup dry white wine.
09 - 4 cups seafood or chicken stock.
10 - 1 teaspoon fresh thyme.
11 - 1 bay leaf.
12 - 1 cup heavy cream.
13 - Salt and pepper to taste.
14 - Fresh parsley for garnish.

# Instructions:

01 - Steam or boil lobster tails. Remove meat and chop. Reserve shells.
02 - Heat oil in large pot. Cook onions, carrots, and celery until soft. Add garlic and cook one minute more.
03 - Add tomato paste and cook few minutes. Add wine and scrape bottom of pot.
04 - Add shells, stock, thyme, and bay leaf. Simmer 30 minutes then remove shells.
05 - Remove bay leaf and thyme. Blend soup until smooth.
06 - Add cream and lobster meat. Heat through and season with salt and pepper.

# Notes:

01 - Can be made ahead up to base stage.
02 - Use shells for deeper flavor.
03 - Reheat gently to prevent cream from curdling.
