Coffee Mousse (Print Version)

# Ingredients:

01 - 1 tablespoon instant coffee granules.
02 - 1/4 cup water.
03 - 3/4 cup caster sugar.
04 - 1/2 teaspoon powdered gelatin.
05 - 1 teaspoon vanilla extract.
06 - 1 1/2 cups cold whipping cream.
07 - Cocoa or chocolate shavings for garnish.

# Instructions:

01 - Heat water on low, stir in gelatin until fully dissolved, don't boil.
02 - Add coffee and sugar, stir until dissolved.
03 - Chill coffee mixture 15-20 minutes until cooler than room temperature.
04 - Beat cold cream to firm peaks, being careful not to overwhip.
05 - Fold whipped cream into coffee mixture in four portions.
06 - Divide into glasses, chill at least 2 hours.

# Notes:

01 - Can use espresso instead of instant coffee.
02 - Best served within 24 hours.
03 - Adjust coffee strength to taste.
