Creamy coffee-flavored bites (Print Version)

# Ingredients:

01 - 4 oz cream cheese or coconut butter
02 - 2 tbsp butter, or additional coconut butter
03 - 3 tbsp powdered sugar or erythritol
04 - 1/2 tsp instant coffee
05 - 3 oz chocolate chips or broken up chocolate, optional

# Instructions:

01 - Bring the first two ingredients to room temperature if not already soft.
02 - Combine all ingredients until smooth. Using a hand mixer yields the smoothest results by far, but stirring with a fork technically works and still tastes good.
03 - Spread into a container, or freeze a few minutes until firm enough to use a mini cookie scoop to place balls onto a parchment-lined plate. Freeze until firm. If using a container, cut into bars or squares.
04 - If desired, dip in melted chocolate. (For a smoother sauce, stir half a teaspoon of oil into the chocolate after melting. This is not required.) To make bites like the ones in the photos, cut them in half as soon as the chocolate sets.
05 - Refrigerate or freeze leftovers.

# Notes:

01 - For a dairy-free version, use coconut butter instead of cream cheese and butter.
02 - For a sugar-free version, use erythritol instead of powdered sugar and sugar-free chocolate chips.
03 - These truffles can be stored in the freezer for up to 3 months.
