Italian comfort food classic (Print Version)

# Ingredients:

01 - 1 lb chicken breast, cubed
02 - 2 tbsp olive oil
03 - 1 onion, chopped
04 - 4 garlic cloves, minced
05 - 1 tsp dried basil
06 - 1 tsp dried oregano
07 - 1/2 tsp red pepper flakes (optional)
08 - 1 can (28 oz) crushed tomatoes
09 - 4 cups chicken broth
10 - 1 cup heavy cream
11 - 1 cup grated Parmesan
12 - 8 oz small pasta (ditalini or rotini)
13 - Salt & pepper to taste
14 - Fresh basil or parsley, for garnish

# Instructions:

01 - Sauté cubed chicken in olive oil until nicely browned on all sides. Remove and set aside.
02 - In the same pot, cook chopped onion until soft and translucent. Add minced garlic, dried basil, oregano and red pepper flakes, cooking until fragrant.
03 - Stir in crushed tomatoes and chicken broth. Return the chicken to the pot. Bring to a simmer and cook for 15-20 minutes.
04 - Add pasta to the soup and cook until tender. Stir in heavy cream and grated Parmesan until completely melted and incorporated.
05 - Ladle into bowls while hot, garnish with fresh herbs and extra cheese if desired.
