# Ingredients:

→ Main Ingredients

01 - 1 large cauliflower
02 - 6 tbsp olive oil
03 - 8 oz sharp white cheddar cheese, grated
04 - 4 oz parmesan cheese, grated

→ Seasonings

05 - 1 tsp Old Bay seasoning
06 - ½ tsp chili pepper
07 - Fresh ground pepper to taste

# Instructions:

01 - Preheat the oven to 450°F (230°C). Break the cauliflower into florets, slicing larger pieces in half.
02 - In a large mixing bowl, toss the cauliflower with 6 tbsp olive oil until evenly coated. Sprinkle with ½ tsp Old Bay seasoning, ¼ tsp chili pepper, and fresh ground pepper. Toss again to coat, then repeat the seasoning for even distribution.
03 - Arrange the seasoned cauliflower on a foil-lined baking sheet, ensuring pieces are spread out without overlapping. Place sliced florets flat-side down for even roasting. Bake on the top rack for 15 minutes.
04 - Remove cauliflower from oven. Sprinkle grated sharp white cheddar and parmesan cheeses evenly over the florets.
05 - Return the cauliflower to the oven and bake for an additional 7-10 minutes, or until the cheese is golden and crispy. Using a spatula, scrape up the crispy cheese from the pan when serving.

# Notes:

01 - Place florets flat-side down for best roasting results
02 - Don't forget to scrape up crispy cheese when serving
