Preheat the oven to 450°F (230°C). Break the cauliflower into florets, slicing larger pieces in half.

In a large mixing bowl, toss the cauliflower with 6 tbsp olive oil until evenly coated. Sprinkle with ½ tsp Old Bay seasoning, ¼ tsp chili pepper, and fresh ground pepper. Toss again to coat, then repeat the seasoning for even distribution.

Arrange the seasoned cauliflower on a foil-lined baking sheet, ensuring pieces are spread out without overlapping. Place sliced florets flat-side down for even roasting. Bake on the top rack for 15 minutes.

Remove cauliflower from oven. Sprinkle grated sharp white cheddar and parmesan cheeses evenly over the florets.

Return the cauliflower to the oven and bake for an additional 7-10 minutes, or until the cheese is golden and crispy. Using a spatula, scrape up the crispy cheese from the pan when serving.
