Chicken Flautas (Print Version)

# Ingredients:

01 - 4 tablespoons taco seasoning.
02 - 5 cups rotisserie chicken, shredded.
03 - 2 cups Monterey Jack cheese, shredded.
04 - 2 cans (4 oz each) green chiles, drained.
05 - 20 flour tortillas (6-inch).
06 - Canola oil for frying.
07 - ½ teaspoon salt.
08 - 20 toothpicks.
09 - Sour cream for serving.
10 - Guacamole for serving.
11 - Pico de gallo for serving.
12 - Salsa for serving.

# Instructions:

01 - Mix shredded chicken with taco seasoning in a bowl. Add cheese and green chiles, stir well.
02 - Put ⅓ cup chicken mix in middle of each tortilla. Press filling into a line and roll tortilla tightly. Secure with a toothpick.
03 - Pour ½ inch oil in a cast iron pan. Heat to 375°F. Heat oven to 250°F for keeping flautas warm.
04 - Cook 4 flautas at a time until golden brown, about 2 minutes, turning to crisp all sides. Keep warm in oven while cooking rest.
05 - Remove toothpicks and serve hot with sour cream, guacamole, pico de gallo, and salsa.

# Notes:

01 - Use toothpicks to keep flautas from unrolling while frying. Weave them through where tortilla ends overlap.
02 - Keep cooked flautas warm in oven while finishing the batch for best results.
