Quick Gourmet Fish Dinner (Print Version)

01 - 2 pounds side wild salmon fillet
02 - ⅔ cup plain breadcrumbs
03 - ⅔ cup parmesan cheese, grated
04 - ¼ cup fresh parsley, finely chopped
05 - 4 cloves garlic, minced
06 - ⅓ cup butter, melted
07 - 1 pinch salt
08 - 1 pinch pepper
09 - 2 lemon wedges, to serve

# Instructions:

01 - Position a rack in the middle of the oven. Preheat oven to 400°F | 200°C. Line a baking tray / sheet with a large piece of foil. Place the salmon fillet, skin side down, on the baking sheet; set aside.
02 - Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with ¾ teaspoon salt and ⅓ teaspoon pepper (or to taste). Using your hands (it's easier than using a wooden spoon), mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).
03 - Pour the mixture over the salmon, pressing it into the top until the fillet is completely covered. Lightly spray salmon with cooking oil spray for a golden crumb.
04 - Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork.
05 - Serve with lemon wedges and a squeeze of lemon (optional). Team with a salad, steamed vegetables, rice or mashed potatoes.

# Notes:

01 - Use fresh shredded parmesan in the crumb topping instead of the fine powdery parmesan found in plastic containers. It gives it a better flavour
02 - The cooking time may vary depending on the thickness of your salmon fillet
03 - This dish pairs well with a variety of sides including salad, steamed vegetables, rice or mashed potatoes
