Crispy Greek-Style Fries (Print Version)

# Ingredients:

01 - 1/2 teaspoon garlic powder
02 - 1/2 teaspoon black pepper
03 - 1/2 teaspoon dried dill
04 - 1/2 teaspoon oregano
05 - 1 teaspoon salt
06 - 3 tablespoons olive oil
07 - 4 large Yukon Gold potatoes

08 - tzatziki, aioli, or lemon wedges, you pick
09 - 1/4 cup feta cheese, crumbled
10 - 1 medium red onion, finely chopped
11 - 1/2 cup fresh parsley, finely chopped

# Instructions:

01 - Grab your dipping sauce or some lemon and dig in. Make sure you eat these fries while they're still hot.
02 - Pile those fries onto a plate, sprinkle the chopped parsley over them along with red onion and plenty of crumbly feta.
03 - Let them bake for another 6 to 8 minutes after flipping so they get extra crisp and turn a beautiful golden brown. Start by baking the potato sticks for 15 minutes, then take them out to flip.
04 - Throw down some parchment paper on your sheet pan. Spread the fries out so they’re not lying on top of each other.
05 - Mix the dried dill, olive oil, oregano, salt, black pepper, and garlic powder with the potatoes in a big bowl. Toss until all fries look evenly coated.
06 - After slicing, toss the fries into cold water and let them chill for 10 to 15 minutes. Drain really well and pat dry after.
07 - Cut the unpeeled, washed potatoes into sticks about one third of an inch thick. Try to keep the fries as long as you can.
08 - Fire up your oven to 425 F and wait until it’s hot.

01 - If you want your fries super crispy, really dry off your potatoes before they hit the oven.
