Grab your dipping sauce or some lemon and dig in. Make sure you eat these fries while they're still hot.

Pile those fries onto a plate, sprinkle the chopped parsley over them along with red onion and plenty of crumbly feta.

Let them bake for another 6 to 8 minutes after flipping so they get extra crisp and turn a beautiful golden brown. Start by baking the potato sticks for 15 minutes, then take them out to flip.

Throw down some parchment paper on your sheet pan. Spread the fries out so they’re not lying on top of each other.

Mix the dried dill, olive oil, oregano, salt, black pepper, and garlic powder with the potatoes in a big bowl. Toss until all fries look evenly coated.

After slicing, toss the fries into cold water and let them chill for 10 to 15 minutes. Drain really well and pat dry after.

Cut the unpeeled, washed potatoes into sticks about one third of an inch thick. Try to keep the fries as long as you can.

Fire up your oven to 425 F and wait until it’s hot.
