Spicy Honey Feta Chicken (Print Version)

# Ingredients:

→ For the Hot Honey

01 - ⅓ cup (110g) honey
02 - 1 ½ tsp hot sauce (Frank's or Cholula)
03 - ¾ tsp chilli flakes

→ For the Chicken

04 - 2x 250g (9oz) chicken breasts
05 - 200g (7oz) feta, crumbled
06 - 6-8 tbsp vegetable oil, as needed

→ Seasonings

07 - 2 tsp paprika
08 - 1 tsp salt
09 - ½ tsp onion powder
10 - ½ tsp garlic powder
11 - ½ tsp dried oregano
12 - ½ tsp black pepper
13 - ¼ tsp cayenne pepper

→ For Coating

14 - 35g (¼ cup) plain flour
15 - 2 eggs, beaten
16 - 65g (1 cup) panko breadcrumbs

# Instructions:

01 - Combine honey, hot sauce and chilli flakes in a bowl. Warm in microwave for 20 seconds or simmer on stove. Stir and let cool.
02 - Horizontally slice chicken breasts through the centre to create 4 even-sized pieces. Mix paprika, salt, onion powder, garlic powder, oregano, cayenne and black pepper in a bowl.
03 - Set up 3 dishes: first with flour and half the seasoning, second with beaten egg, third with panko and remaining seasoning. Dredge chicken through each, ensuring thorough coating.
04 - Heat oil in large pan over medium-high heat. Fry chicken 3-4 minutes per side until golden and cooked through. Place on wire rack.
05 - Cover chicken with crumbled feta, then grill until golden and soft. Drizzle with hot honey before serving.
