Crunchy Chicken Romesco Sandwich (Print Version)

# Ingredients:

01 - 2 chicken breasts, sliced into 4 cutlets.
02 - 50g flour.
03 - 50g panko breadcrumbs.
04 - 1 egg, whisked.
05 - 2 tablespoons olive oil.
06 - 2 garlic cloves.
07 - 2 roasted red peppers, jarred.
08 - 4 sun-dried tomatoes.
09 - 2 tablespoons almonds.
10 - ½ tablespoon balsamic vinegar.
11 - 4 tablespoons olive oil.
12 - 1 teaspoon paprika.
13 - 2 teaspoons kosher salt.
14 - 2 tablespoons sour cream.
15 - 1 tablespoon mayonnaise.
16 - ½ lemon, juiced.
17 - 2 focaccia loaves.
18 - 4 tablespoons butter, room temperature.
19 - Parmesan cheese for grating.
20 - 5g parsley, chopped.
21 - Lettuce and arugula.

# Instructions:

01 - Slice chicken breasts horizontally. Coat in flour, egg, then panko. Fry in oil 4 minutes per side until golden.
02 - Blend peppers, tomatoes, almonds, garlic, vinegar, oil, paprika, and salt until smooth.
03 - Mix sour cream, mayo, lemon juice, and parmesan. Toss with lettuce and arugula.
04 - Mix butter with garlic and parsley. Spread on focaccia, top with parmesan, and grill until golden.
05 - Layer romesco sauce, chicken, salad between focaccia pieces. Wrap in parchment.
