Fresh Cucumber Shrimp Salad (Print Version)

# Ingredients:

01 - 2 pounds shrimp, peeled and deveined.
02 - 1 English cucumber, diced small.
03 - 3 green onions, thinly sliced.
04 - 1/3 cup mayonnaise.
05 - 1/3 cup sour cream.
06 - 1 large lime, zested and juiced.
07 - 2 tablespoons fresh dill, chopped.
08 - 1 tablespoon Dijon mustard.
09 - 1 garlic clove, minced.
10 - 1/4 teaspoon kosher salt.

# Instructions:

01 - Mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, and salt.
02 - Boil shrimp 2-3 minutes until pink. Transfer to ice bath for 3 minutes.
03 - Drain shrimp and chop into bite-sized pieces.
04 - Mix chopped shrimp, cucumber, green onion, and dressing until well coated.

01 - Use fresh lime for best flavor.
02 - Can be made ahead and chilled.
