Flavorful Curried Basmati Rice (Print Version)

# Ingredients:

01 - 1 sweet onion, finely chopped
02 - 1 cup mushrooms, chopped
03 - 1 bell pepper, diced (any color, but red works well)
04 - 1 Tbsp olive oil
05 - 1 cup Basmati Rice
06 - 1 Tbsp yellow Curry powder
07 - ½ tsp Kosher salt
08 - 1½ cups water

# Instructions:

01 - Chop up and prep the onion, mushrooms and pepper according to the ingredients list.
02 - In a large saucepan or small pot, that has a lid to fit, heat oil. Add in the onions, mushrooms and diced pepper. Sauté for a couple minutes.
03 - Add in the rice and continue to sauté for a minute or two to toast the rice. Add in the curry powder and salt as you sauté.
04 - Pour in the water and bring to a boil. Fit the lid on and turn the heat down to low. Let the rice steam for 20 minutes.
05 - Remove from heat and stir through to fluff up the rice.

02 - Pairs well with grilled, Indian and Thai main dishes.
