Healthy Date Snickers Bark (Print Version)

# Ingredients:

→ Base Ingredients

01 - 20 pitted medjool dates
02 - 12 oz (340 g) chopped chocolate or chocolate chips
03 - 1 teaspoon coconut oil (optional)

→ Toppings

04 - ¼ - ½ cup (64 - 128 g) natural peanut butter, well stirred
05 - ½ cup (60 g) chopped peanuts
06 - ½ teaspoon flaky salt (optional)

# Instructions:

01 - Line a small baking sheet or large plate with parchment paper. Remove pits from dates if needed. Open dates in center and lay flat on parchment paper, creating a single layer.
02 - Place another parchment paper on top of dates. Using your hand or bottom of a cup, press or smash dates into a single layer, filling spaces between dates.
03 - In a microwave safe bowl, heat chocolate and coconut oil (if using) in 30 second increments, stirring between each, until fully melted.
04 - Spread peanut butter evenly on top of smashed dates. Drizzle melted chocolate over peanut butter layer and spread evenly.
05 - Top with chopped peanuts and flaky salt. Chill in fridge for 1 hour or freezer for 20-30 minutes until set. Cut into pieces with sharp knife.

# Notes:

01 - Best served from the fridge
02 - Keeps well in fridge for up to 2 weeks
03 - Can be made as stuffed date snickers (see variations)
