Line a small baking sheet or large plate with parchment paper. Remove pits from dates if needed. Open dates in center and lay flat on parchment paper, creating a single layer.

Place another parchment paper on top of dates. Using your hand or bottom of a cup, press or smash dates into a single layer, filling spaces between dates.

In a microwave safe bowl, heat chocolate and coconut oil (if using) in 30 second increments, stirring between each, until fully melted.

Spread peanut butter evenly on top of smashed dates. Drizzle melted chocolate over peanut butter layer and spread evenly.

Top with chopped peanuts and flaky salt. Chill in fridge for 1 hour or freezer for 20-30 minutes until set. Cut into pieces with sharp knife.
