# Ingredients:

01 - 3 large eggs, separated
02 - 1/2 cup cottage cheese, blended until smooth
03 - 1/4 teaspoon cream of tartar
04 - 1/2 teaspoon salt

05 - 1 tablespoon cornstarch or arrowroot powder
06 - 1 teaspoon honey or a pinch of sweetener

# Instructions:

01 - Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. Separate the egg whites and yolks into two bowls.
02 - Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form.
03 - In the bowl with the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix until smooth.
04 - Gently fold the whipped egg whites into the yolk and cottage cheese mixture in thirds. Use a spatula to fold carefully, maintaining as much air as possible for fluffiness.
05 - Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds. Bake in the preheated oven for 25-30 minutes, or until golden brown and set. Let cool completely before serving.
