French Onion Chicken (Print Version)

# Ingredients:

01 - 2 tablespoons butter, divided.
02 - 1 tablespoon olive oil, divided.
03 - 2 large white onions, thinly sliced.
04 - 1 tablespoon balsamic vinegar.
05 - 2 chicken breasts (500g total).
06 - ½ teaspoon salt.
07 - ¼ teaspoon dried thyme.
08 - ¼ teaspoon black pepper.
09 - ¼ teaspoon garlic powder.
10 - 1 tablespoon plain flour.
11 - 1 cup beef stock.
12 - ½ teaspoon worcestershire sauce.
13 - 100g gruyere cheese, grated.
14 - Fresh chives for garnish.

# Instructions:

01 - Cook sliced onions in butter and oil over medium heat 15 minutes. Add balsamic and seasonings. Reduce heat, cook 20 more minutes until very soft.
02 - Slice chicken breasts horizontally to make 4 pieces. Season with salt, garlic powder, thyme and pepper.
03 - Remove onions. Cook chicken in remaining butter and oil until golden on both sides. Set aside.
04 - Return onions to pan, stir in flour. Gradually add stock and worcestershire sauce. Add chicken juices.
05 - Add chicken back, top with onions and cheese. Broil until cheese melts. Garnish with chives.

# Notes:

01 - Don't rush caramelizing onions.
02 - Can use lid instead of broiler to melt cheese.
