Cook rice in 2 cups of boiling water. Cover and simmer on low for 18–20 minutes, until tender. Remove from heat and set aside.

While the rice cooks, heat olive oil in a large skillet over medium-high. Add ground beef and break it up as it cooks. Once browned, drain excess fat if needed.

Stir in garlic, onion powder, Cajun seasoning, and smoked paprika. Cook for 1–2 minutes until the garlic is fragrant.

Pour in beef broth and heavy cream. Stir to combine, then let it simmer for about 5 minutes until it thickens slightly.

Add cheddar, Parmesan, and butter. Mix until melted and the sauce is smooth. Season with salt and cracked black pepper to taste.

Fold in the cooked rice and stir until well coated with the cheesy garlic sauce.
