# Ingredients:

01 - 2 NY Strip steaks, cut into cubes.
02 - 1 tablespoon kosher salt.
03 - 1 tablespoon black pepper.
04 - 1 tablespoon garlic powder.
05 - 5-6 golden potatoes, peeled.
06 - ½ cup whole milk.
07 - ½ cup sharp cheddar cheese.
08 - 4 tablespoons unsalted butter.
09 - ½ cup beef broth.
10 - 2 tablespoons Dijon mustard.
11 - 1½ tablespoons steak sauce.
12 - 1½ tablespoons champagne vinegar.
13 - 1 teaspoon Worcestershire sauce.
14 - Neutral oil as needed.

# Instructions:

01 - Boil salted water. Add peeled, quartered potatoes. Cook 25-30 minutes until tender. Drain, mash, then mix in butter, milk, and cheese.
02 - Cut steaks into cubes. Coat with oil and season with salt, pepper, and garlic powder.
03 - Heat skillet until very hot. Cook steak 3-3.5 minutes per side until 120°F internal temperature. Rest 10 minutes.
04 - Deglaze pan with beef broth, scraping up brown bits. Add mustard, steak sauce, vinegar, and Worcestershire. Simmer 10 minutes until thick.
05 - Place mashed potatoes in bowls, top with steak bites and pan sauce. Garnish with parsley.
