Easy One-Pan Chicken Dinner (Print Version)

# Ingredients:

→ Chicken

01 - 4 boneless skinless chicken breasts
02 - 1 teaspoon Italian seasoning
03 - ½ teaspoon smoked paprika
04 - ½ teaspoon salt
05 - ¼ teaspoon black pepper
06 - 1 tablespoon olive oil

→ Potatoes

07 - 1.5 pounds baby Yukon Gold or red potatoes, halved
08 - 3 tablespoons olive oil
09 - 4 cloves garlic, minced
10 - ⅓ cup grated Parmesan cheese
11 - ½ teaspoon salt
12 - ¼ teaspoon black pepper

→ Garnish

13 - 1 tablespoon chopped fresh parsley

# Instructions:

01 - Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
02 - Pat chicken dry. Mix Italian seasoning, paprika, salt, and pepper. Rub chicken with oil and seasonings.
03 - Toss halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper until evenly coated.
04 - Place chicken on one side of baking sheet, potatoes on the other in a single layer.
05 - Roast for 25-30 minutes, flipping potatoes halfway. Chicken should reach 165°F internal temperature.
06 - Optional: Top with extra Parmesan and broil for 5 minutes. Garnish with parsley before serving.

01 - Can use chicken thighs instead of breasts
