Greek Chicken Soup with Lemon and Orzo (Print Version)

# Ingredients:

01 - 1 tablespoon avocado oil.
02 - 2 medium carrots, diced.
03 - 3 celery stalks, diced.
04 - 1 medium onion, diced.
05 - 2-3 garlic cloves, minced.
06 - 2½-3 cups cooked shredded chicken.
07 - 6 cups chicken bone broth.
08 - 1 bay leaf.
09 - 1 tablespoon dried thyme.
10 - 1 cup dry orzo.
11 - 1 lemon, juiced.
12 - 2 tablespoons fresh parsley, chopped.
13 - Salt and pepper to taste.

# Instructions:

01 - Dice vegetables and prepare shredded chicken.
02 - Heat oil in large pot. Sauté carrots, celery, onions, and garlic with salt and pepper for 5-6 minutes until soft.
03 - Add chicken, broth, bay leaf, and thyme. Cover and bring to simmer.
04 - Add orzo and cook 7-9 minutes until tender.
05 - Remove from heat. Stir in lemon juice and adjust seasonings. Garnish with parsley.

01 - Using rotisserie chicken saves time.
02 - Can adjust lemon to taste.
