Preheat your oven to 425°F and line a baking sheet with parchment paper.

Wash the potatoes well, leaving the skins on for extra flavor. Cut them into even sticks about 1/3-inch wide, keeping each fry the same length as the potato for even cooking.

Place the cut fries in a large bowl of cold water and let them soak for 10-15 minutes. This removes excess starch for crispier fries. After soaking, drain and thoroughly pat them dry.

In a large mixing bowl, toss the dried potato sticks with olive oil, salt, dried oregano, dried dill, black pepper and garlic powder until evenly coated.

Spread the seasoned potatoes in a single layer on your prepared baking sheet. Bake for 15 minutes, then carefully flip them over. Return to the oven for another 6-8 minutes until crisp and golden brown.

Transfer the hot fries to a serving plate and sprinkle with fresh parsley, chopped red onion, and crumbled feta cheese. Serve immediately with tzatziki, aioli, or lemon wedges on the side.
