Crispy Greek-Style Fries (Print Version)

# Ingredients:

→ For the fries

01 - 4 large Yukon Gold Potatoes
02 - 3 tablespoons olive oil
03 - 1 teaspoon salt
04 - 1/2 teaspoon oregano
05 - 1/2 teaspoon dried dill
06 - 1/2 teaspoon black pepper
07 - 1/2 teaspoon garlic powder

→ For the toppings

08 - 1/2 cup fresh parsley, finely chopped
09 - 1 medium red onion, finely chopped
10 - 1/4 cup feta cheese, crumbled
11 - tzatziki, aioli or lemon wedges, optional

# Instructions:

01 - Preheat your oven to 425°F and line a baking sheet with parchment paper.
02 - Wash the potatoes well, leaving the skins on for extra flavor. Cut them into even sticks about 1/3-inch wide, keeping each fry the same length as the potato for even cooking.
03 - Place the cut fries in a large bowl of cold water and let them soak for 10-15 minutes. This removes excess starch for crispier fries. After soaking, drain and thoroughly pat them dry.
04 - In a large mixing bowl, toss the dried potato sticks with olive oil, salt, dried oregano, dried dill, black pepper and garlic powder until evenly coated.
05 - Spread the seasoned potatoes in a single layer on your prepared baking sheet. Bake for 15 minutes, then carefully flip them over. Return to the oven for another 6-8 minutes until crisp and golden brown.
06 - Transfer the hot fries to a serving plate and sprinkle with fresh parsley, chopped red onion, and crumbled feta cheese. Serve immediately with tzatziki, aioli, or lemon wedges on the side.

01 - Greek fries are best enjoyed warm right after adding the toppings.
02 - The cold water soak helps remove excess starch from the potatoes, resulting in crispier fries.
