Fold in the sides of each tortilla, then roll tightly from the bottom to secure the filling. Heat a non-stick skillet or griddle over medium heat. Optionally, scatter shredded Mexican cheese blend directly onto the skillet. Place each burrito seam-side down onto the cheese and grill for 2–3 minutes per side, until a crisp, golden cheese crust forms.
