Grilled Chicken Thighs with Chimichurri (Print Version)

# Ingredients:

01 - 1/2 cup fresh cilantro.
02 - 1/2 cup fresh Italian parsley.
03 - 1 tablespoon fresh oregano.
04 - 1 small shallot.
05 - 2 cloves garlic.
06 - 1/2 jalapeño pepper.
07 - 1 tablespoon lemon juice.
08 - 1 tablespoon red wine vinegar.
09 - 1/2 cup olive oil.
10 - 1 teaspoon kosher salt.
11 - Fresh ground pepper.
12 - 2 pounds boneless skinless chicken thighs.

# Instructions:

01 - Process herbs, shallot, garlic, and jalapeño in food processor.
02 - Add liquids and seasonings, pulse until well combined.
03 - Season chicken, coat with 1/4 cup chimichurri, marinate 20 minutes to 24 hours.
04 - Heat grill to medium-high, let chicken warm slightly before grilling.
05 - Grill chicken 5-6 minutes per side until juices run clear.
06 - Top with extra chimichurri sauce.
