Hamburger Stroganoff Sauce (Print Version)

# Ingredients:

01 - 6 ounces whole wheat egg noodles (or regular)
02 - 16 ounces cremini mushrooms, sliced
03 - 1 pound lean ground beef (90% or 93% lean)
04 - 1 tablespoon extra-virgin olive oil
05 - ½ teaspoon kosher salt
06 - 1 ½ teaspoons garlic powder
07 - ½ teaspoon onion powder
08 - ½ teaspoon ground black pepper
09 - 2 teaspoons smoked paprika
10 - 1 teaspoon dried thyme

→ Sauce

11 - 1 tablespoon Worcestershire sauce
12 - 1 teaspoon Dijon mustard (optional)
13 - 2 tablespoons all-purpose flour
14 - ⅔ cup room-temperature Greek yogurt or sour cream (full-fat, about 5 ½ ounces)
15 - 1 15-ounce can beef broth, divided

16 - Fresh parsley or thyme, chopped (optional)

# Instructions:

01 - Heat up the olive oil in a wide, deep pan on medium-high heat. Once sizzling, toss in the ground beef along with smoked paprika, thyme, garlic powder, onion powder, salt, and pepper. Break it up as it cooks and keep going until the beef is browned and fully cooked (about 6-8 minutes). If needed, drain extra grease.
02 - Turn the heat down to medium, then add your sliced mushrooms to the beef. Stir occasionally and let them soften, brown, and reduce in size, which should take about 8-10 minutes.
03 - In the meantime, boil a big pot of salted water. Toss in your noodles and cook them until they're just tender, following the package directions. Drain them and put them aside.
04 - Sprinkle the flour over the mushroom and beef mixture. Stir to coat everything evenly. Slowly add about a third of the beef broth, scraping the bottom of the pan to loosen any flavorful bits. Stir in Worcestershire sauce and, if you'd like, Dijon mustard.
05 - Pour in the rest of the beef broth, and allow the mixture to boil gently. Lower the heat and let it simmer, occasionally giving it a stir, for 10 minutes.
06 - Take the pan off the heat for a minute to let it cool slightly. Gently mix in the room-temperature Greek yogurt or sour cream until smooth. If needed, adjust the seasoning to your taste.
07 - Spoon the stroganoff over your cooked noodles and sprinkle the optional garnishes on top. Alternatively, mix the noodles right into the sauce and serve it that way.

# Notes:

01 - Avoid using fat-free Greek yogurt since it might curdle. Make sure it’s at room temperature and only mix it in after the pan is off the heat.
