# Ingredients:

→ For the Casserole Base

01 - 1 lb ground beef or sausage
02 - 2 cups flour
03 - 1 tbsp baking powder
04 - 1 tsp dried Italian Herbs
05 - 1 tsp salt
06 - 1/4 cup olive oil
07 - 1/2 cup buttermilk (may sub. 1/2 cup milk + 1/2 tbsp vinegar)
08 - 1/2 cup ketchup
09 - 1/4 cup mustard
10 - 1 1/2 cups shredded cheddar

→ For the Topping

11 - 2 cups shredded lettuce
12 - 1/2 cup chopped dill pickle
13 - 1/3 cup mayo
14 - 2-3 tbsp dill pickle juice

# Instructions:

01 - Preheat oven to 400°F. In a skillet, brown the ground beef (or sausage) until fully cooked. Drain any excess grease and set aside.
02 - In a medium mixing bowl, whisk together flour, baking powder, dried Italian herbs, and salt. Add olive oil and buttermilk. Stir until combined to form a biscuit dough consistency. You may need to add more flour or milk to get the right consistency - you're looking for a slightly sticky, soft biscuit dough.
03 - Press the dough into a greased 9"x13" baking dish, creating an even layer across the bottom. In a small bowl, mix together ketchup and mustard, then pour this sauce over the biscuit dough, spreading it evenly. Sprinkle the cooked ground beef over the sauce layer, then top with shredded cheddar cheese.
04 - Bake for 15 minutes or until the bottom is golden brown and the cheese is melted and bubbly.
05 - While the casserole is baking, in a small bowl, mix together mayo and pickle juice to create a dressing.
06 - Remove the baked casserole from the oven. Sprinkle the top with shredded lettuce and chopped pickles, then drizzle with the mayo mixture. Cut into squares and serve immediately while still warm.
