Mix flour, baking powder, and salt in a medium bowl. Pour in the hot water and mix with your hands until it forms a slightly sticky dough. Cover the bowl and let the dough rest for 10 minutes.

While the dough rests, pour 1-2 inches of vegetable oil into a medium skillet. Heat over medium-high until it reaches 350°F (if you don't have a thermometer, the oil is ready when a small piece of dough sizzles and floats immediately).

Pinch off golf ball-sized pieces of dough and roll each into a smooth ball with your hands.

On a floured surface, roll each ball into a thin circle about 6-7 inches in diameter. Don't worry if they're not perfectly round - the rustic look is part of their charm!

Working in batches, carefully place the rolled dough into the hot oil. The bread will puff up immediately. Fry until golden on one side (about 20 seconds), then flip and fry the other side for 10-20 seconds more. Transfer to paper towels to drain excess oil.

Place fried bread on a baking sheet in a warm oven (200°F) while you finish frying the remaining pieces.
