Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and set it aside.

Cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.

In a large bowl, whisk together the Sriracha sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined.

Add the cubed potatoes to the bowl and toss them gently to coat them evenly with the Sriracha honey mixture.

Transfer the coated potatoes onto the prepared baking sheet, spreading them out in a single layer. Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the potatoes are golden brown and crispy on the outside.

Once the potatoes are done, remove them from the oven and let them cool for a few minutes and sprinkle the crumbled bacon over the roasted potatoes and gently toss to combine.
