01 - 4 large potatoes
02 - 8 bacon slices
03 - 2 tbsp Sriracha sauce
04 - 2 tbsp honey
05 - 1 tbsp olive oil
06 - 1 tsp garlic powder
07 - 1/2 tsp smoked paprika
08 - pinch salt and pepper

# Instructions:

01 - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and set it aside.
02 - Cook the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess grease. Once cooled, crumble the bacon into small pieces.
03 - In a large bowl, whisk together the Sriracha sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper until well combined.
04 - Add the cubed potatoes to the bowl and toss them gently to coat them evenly with the Sriracha honey mixture.
05 - Transfer the coated potatoes onto the prepared baking sheet, spreading them out in a single layer. Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the potatoes are golden brown and crispy on the outside.
06 - Once the potatoes are done, remove them from the oven and let them cool for a few minutes and sprinkle the crumbled bacon over the roasted potatoes and gently toss to combine.

01 - To achieve crispy potatoes, make sure to spread them out in a single layer on the baking sheet
02 - You can save time by using pre-cooked bacon or bacon bits
03 - Adjust the amount of Sriracha sauce to suit your preferred level of spiciness
04 - For extra flavor, consider marinating the cubed potatoes in the Sriracha honey mixture for 15-30 minutes before baking
