Honey Mustard Salmon Bites and Veggies (Print Version)

# Ingredients:

01 - 1 1/2 pounds skinless salmon, cubed.
02 - 2 yellow potatoes.
03 - 4-5 carrots, peeled and sliced.
04 - 3 shallots, sliced.
05 - 1/4 cup plus 1 tablespoon olive oil.
06 - 2 teaspoons paprika, divided.
07 - 1 teaspoon salt, divided.
08 - 1 teaspoon black pepper, divided.
09 - 1 teaspoon dijon mustard.
10 - 1 teaspoon honey.
11 - 1/2 teaspoon garlic powder.
12 - 1/4 cup parsley, chopped.
13 - 2 tablespoons mayonnaise.
14 - 2 tablespoons dijon mustard.
15 - 1 tablespoon honey.
16 - 1/4 teaspoon apple cider vinegar.

# Instructions:

01 - Preheat oven to 400°F.
02 - Slice potatoes and carrots, toss with oil and seasonings in baking dish.
03 - Bake 30 minutes, flip, then bake 10 more minutes until tender.
04 - Toss salmon cubes with oil, spices, mustard and honey.
05 - Add salmon and parsley to vegetables, bake 10-12 minutes.
06 - Whisk together sauce ingredients while dish finishes.

# Notes:

01 - Broil last 2 minutes for golden finish.
02 - Potatoes should be fork tender.
03 - Serve with sauce and lemon.
