Traditional Irish Potato Pancakes (Print Version)

# Ingredients:

01 - 1 cup raw grated potatoes
02 - 1 cup mashed potatoes
03 - 1 cup all-purpose flour
04 - 1 teaspoon baking powder
05 - 1/2 teaspoon salt
06 - 1/2 to 3/4 cup buttermilk (as needed)
07 - Butter or oil for frying

# Instructions:

01 - Place the grated raw potatoes in a clean towel and squeeze out excess moisture.
02 - In a mixing bowl, combine the grated potatoes, mashed potatoes, flour, baking powder, and salt.
03 - Gradually add buttermilk, stirring until the batter reaches a thick but pourable consistency.
04 - Heat a non-stick pan or skillet over medium heat and add a bit of butter or oil.
05 - Drop spoonfuls of batter onto the pan, flattening them slightly with the back of a spoon. Cook for 3–4 minutes per side until golden brown and crispy.
06 - Remove from heat and serve warm with butter, sour cream, or your favorite toppings.
